After doing some more digging, I was able to resolve it by right-clicking on the desktop and selecting GRAPHICS OPTIONS -> ROTATION, and selecting 90 degrees (the touch-screen was back in sync with the video at this point), then go back into the same menu and select NORMAL. It's a bit of a challenge doing the latter part because the screen is rotated by 90 degrees, but it can be done! :^)
